Garden of Edna

My lifelong neighbor friend gave me this garden when she moved away from her husband two years ago, when she was sure as hell not going to leave behind for him any plant, shrub or tree in the gardens she lavishedly planted over the years. She dug everything up and put it all in her van and traveled back and forth, many, many trips, to transplant in her new yard, two hours away. She also decided to plant a new garden for us in our front yard, so a few days before she left, she came over with her brother and a wheelbarrow full of tools and soil, and set these babies in the ground and they have grown spectacular!

Egg Drop Soup

Egg Drop Soup
serves 4

4 cups chicken broth, divided
1/8 tsp ground ginger
2 tblsp chopped fresh chives
1/4 tsp salt
1 1/2 tblsp cornstarch
4 eggs
1 egg yolk

Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan.
Stir the salt, ginger and chives into the saucepan, and bring to a rolling boil.
In a cup or small bowl, stir together the remaining broth and cornstarch until smooth. Set aside.
In a small bowl, whisk the eggs and egg yolk together using a fork.
Drizzle egg a little at a time from the fork into the boiling broth mixture.
Egg should cook immediately.
Once the eggs have been dropped, stir in the cornstarch mixture gradually until the soup is the desired consistency.
